French toast is a classic breakfast and brunch staple. And if you haven’t tried it crusted with granola, then you’re in for a real treat. This granola is so delicious and what makes it even better is that it’s lightly sweetened and there’s no funky ingredients.

2 thick slices

Sourdough Bread

1

Large Egg

1/4 cup

Coconut Milk

1 tsp

Vanilla Extract

1 tsp

Maple Sugar

1 cup

More Granola Salted Caramel

crumbled

Instructions

In a shallow dish, add the egg and whisk.

Add the coconut milk, vanilla, maple sugar and mix to combine.

In another shallow dish, add the crumbled granola.

Dip the bread in the egg mixture, making sure to coat both sides. Then, dip each piece into the crumbled granola dish and coat on both sides. You can press down to make sure the granola sticks.

Grease a non-stick pan with some coconut oil and cook the coated bread on medium heat until each side is golden brown (about 2-3 minutes per side).

Top with things like maple syrup, coconut butter, berries and cinnamon.
