Panzanella Salad with Salami

One of the ultimate salads to incorporate the abundance of tomatoes that are around in the summertime!

Quick Meal

Ingredients

1/2 Cup

Extra-Virgin Olive Oil

2 Tbsp

Red Wine Vinegar

4 cups

Sourdough Bread

2

Heirloom Tomatoes

50 g

Genoa Salami

1/2 small

Red Onion

1/4 cup

Fresh Basil

1/4 cup

Fresh Parsley

1/2 tsp

Flakey Sea Salt

1/4 tsp

Black Pepper

Instructions

In a small bowl, whisk together the olive oil and vinegar.

In a large salad bowl or serving platter, add the bread and pour half of the dressing in. Mix to coat the bread.

Add the tomatoes, salami, onion, basil, parsley and the rest of the dressing. Toss to combine.

Season with salt and pepper. Cover and let it sit for at least 20 to 30 minutes before serving.

Substitutions: No heirloom tomatoes: Use any other kind.

Note: Use 1-2 day old bread.
