Preheat the oven to 300°. Grate or finely chop the garlic and combine with 2 Tbsp olive oil, ½ tsp sea salt, turmeric, and the zest of one lemon.

Wash and thinly slice the orange and remaining lemon. Arrange on a baking sheet in a single layer with ½ of the thinly sliced red onion. Place the salmon filet on top of the arranged citrus. Pour over the olive oil mixture. Bake in the oven for 30-35 minutes or until the fish is flaking and opaque in the centre.

While the salmon is cooking, finely chop the remainder of the red onion,1-2 Tbsp of lemon juice from the remaining (zested) lemon, chopped herbs and the remaining olive oil. Season with a pinch of sea salt until the flavours come together.

To serve, arrange the salmon on the citrus slices, breaking into generous pieces. Spoon over the herb dressing and enjoy.
