In a microwave safe bowl, melt chocolate chips and coconut oil.

Add in vanilla and mix to combine.

On a baking sheet lined with parchment paper, pour chocolate mixture and flatten on the baking sheet until you have a smooth layer.

Place in the refrigerator for 40 minutes until solid.

Break into pieces and keep refrigerated until serving.

Substitutions: You can substitute the dark chocolate chips for semi sweet, milk or white chocolate.
