Mediterranean Style Tortellini Salad

Kick your pasta salad up a notch by using tortellini! This is an easy salad to whip up for your next summer bbq or a picnic in the park.
Cook the tortellini according to the package. Let it cool for ten minutes.
To a large bowl, add the cooled tortellini, bell pepper, onion, tomatoes, cucumber, olive oil and vinegar. Toss to combine.
Add the oregano, salt, pepper, parsley and crumbled feta. Toss again to combine. Divide into bowls and enjoy!
Notes: Leftovers: Refrigerate in an airtight container for up to three days. Additional toppings: Pitted olives, fresh basil.
