Bright, fresh and invigorating is what makes this lemon poppyseed chia pudding the perfect on-the-go breakfast or afternoon snack! You’ll love that it boasts a good amount of fibre and protein so you can feel good about having this unbelievably delicious treat for breakfast.

2 Tbsp

Chia Seeds

1 cup

Cashew Milk

or other favourite milk

3/4 cup

Greek Yogurt

1/2 tsp

Ground Turmeric

2 Tbsp

Maple Syrup

or more to taste

Lemons

juiced and zested

25 g

Vegan Vanilla Protein Powder

Instructions

Mix the chia seeds, cashew milk, ½ cup yogurt, turmeric, maple syrup, lemon juice, half of the zest and protein powder together in a bowl until well combined. Refrigerate for 30 minutes, mix again, and refrigerate for another 10 minutes.

Divide the chia pudding between serving bowls or jars for meal prepping, and top with the remaining yogurt and zest. Serve and enjoy or store in the refrigerator.

Substitutions: Dairy-free: use coconut yogurt.
