If you have some hard boiled eggs hanging out in the fridge all prepped for easy snacking, but need an exciting new way to eat them, give this wacky recipe a try! Inspired by FeelGoodFoodie, this high-protein chocolate pudding recipe uses hard-boiled eggs as the main ingredient. Before you decide to be put off, you really have to give the recipe a try and see how surprisingly delicious it is. Additionally, the inclusion of psyllium husk provides a slight fibre boost to enhance the recipes benefits.

Hard-Boiled Eggs

chilled

1/2 Tbsp

Psyllium Husk

1/3 cup

Maple Syrup

1/3 cup

Cocoa Powder

plus more for dusting

1/2 tsp

Sea Salt

2 tsp

Vanilla Extract

3-4 Tbsp

Cashew Milk

as needed

Instructions

Add all of the ingredients except for the milk to a high speed blender or food processor. Blend until smooth, scraping down the sides as needed. Add the milk 1 tablespoon at a time to achieve desired thickness. The pudding will thicken as the psyllium absorbs liquid, so keep this in mind while adding the milk.

Scoop into serving bowls. Garnish with cocoa powder. Enjoy!
