Grain-Free Cauliflower Gnocchi

Homemade grain-free gnocchi is a lot easier to make than you think. All you need is some cauliflower, cassava flour, arrowroot starch, sea salt and in about 30 minutes you’ll have delicious fluffy gnocchi. Sauté in a little oil or butter before adding your desired sauce to create a little crispy skin on the gnocchi.

Cauliflower Florets

1 1/4 Cup

Cassava Flour

1/4 cup

Arrowroot Starch

1 tsp

Sea Salt

Bring a large pot of water to boil with a steamer insert. Once boiling, add the cauliflower and steam for 5-10 minutes until tender.

Transfer to a high-powered blender or food processor, and blend until smooth. Add to a mixing bowl along with the cassava flour, arrowroot starch and sea salt. Use a spatula to mix and combine. It should resemble bread dough.

Bring a large pot of water to boil. Meanwhile, dust a work surface with cassava flour. Separate the dough into 4 equal pieces. One at a time, roll the pieces into ¾-inch thick tubes. Cut them into 1-inch pieces.

Add the gnocchi to the boiling water and cook until they have floated to the top. Remove from the water and transfer to a large skillet. Sauté in a little bit of olive oil or butter to get crispy then cook in desired sauce.
