Start by greasing your 12-well muffin tin and set aside. Preheat the oven to 350°F.

In a large bowl, whisk together the coconut sugar, molasses and eggs until smooth.

Add the apple cider, olive oil and milled flax seeds to the egg mixture and whisk until well incorporated. Set aside for five minutes to allow the flax to hydrate.

In another large bowl, combine the oat flour, baking soda, cinnamon, cardamom, ginger and salt. Mix well. Slowly add the flax mixture to the flour mixture and stir until incorporated.

Gently fold in the apple and raisins. Portion the batter into the greased muffin tin, making sure to fill each well completely full.

Garnish with hemp hearts and raw sugar, if using. Bake for 35–40 minutes, or until the muffins are golden brown and a toothpick inserted into the centre comes out clean. Allow the muffins to cool for 5 minutes in the pan, then transfer to a wire rack to finish cooling.

Keep the muffins in the fridge for up to 5 days or sealed in the freezer for up to 2 months.

Notes: Feel free to substitute the apple cider with apple juice if you like. To make oat flour, simply blend oats in a high-speed blender until they reach the consistency of flour.
