Soak the almonds in water for 12-24 hours prior to preparing this recipe. You can soak the almonds in boiling water for 15-minutes if you forget to do this step ahead of time, but for this recipe the longer you soak the almonds the creamier the cheese!

Drain the almonds and add to a high-speed blender. Add all additional ingredients to the blender and blend until smooth. Start the blender on low speed and gradually increase the speed, scraping the sides down as you go. You may need to add in additional ‘splashes’ of water to get the mixture blending. Note: this spread will firm up in the fridge so don’t worry if it seems a bit loose.

Serve on crackers, toast, pasta, salads, and pizza!

Substitutions/Omissions: Use raw cashews instead of almonds. Substitute avocado oil for olive oil.
