English Cucumber

Extra-Virgin Olive Oil

Red Wine Vinegar

Oregano
1/2 tsp
Sea Salt

Black Pepper
1/4 cup
Fresh Parsley
finely chopped

Feta Cheese
crumbled

Cook the tortellini according to the package. Let it cool for ten minutes.

To a large bowl, add the cooled tortellini, bell pepper, onion, tomatoes, cucumber, olive oil and vinegar. Toss to combine.

Add the oregano, salt, pepper, parsley and crumbled feta. Toss again to combine. Divide into bowls and enjoy!

Notes: Leftovers: Refrigerate in an airtight container for up to three days. Additional toppings: Pitted olives, fresh basil.
