Zucchini
shredded (about 1 medium)
1 cup
Carrots
shredded (about 1 medium)
1 lb
Ground Chicken
1 tsp
Garlic Powder
1 tsp
Onion Powder
1/4 tsp

Gluten-Free Breadcrumbs
(or regular if GF isn't needed)
1 tsp
Avocado Oil
or spray as needed

Preheat the air-fryer or convection oven to 400°F. Line a baking sheet with parchment paper and spray with avocado oil.

Add the carrot to a food processor and process until chopped small.

Squeeze the water out of the zucchini to remove as much moisture as possible and add it to the food processor. Pulse with the carrot to mix well.

Add the chicken, garlic powder, onion powder and salt to the food processor and pulse until just combined. Dump the mixture into a large bowl. Roll the mixture into one tablespoon sized balls.

Pour the breadcrumbs onto a small rimmed baking sheet or rimmed plate. Press the chicken balls into the crumbs one at a time, coating both sides and maintaining and chicken nugget shape.

Place the chicken nuggets on the baking sheet and bake for 15 to 20 minutes, flipping halfway, until golden brown and cooked through. Enjoy!

Freeze for up to one month.

Substitutions: No chicken: use ground turkey instead. Not gluten-free: use regular breadcrumbs instead. Veggie variations: swap in broccoli, cauliflower or sweet potato.
