Grilled Watermelon Pizza

Watermelon is one of my favourite snacks on a hot summer day. It’s so refreshing and can help to keep you hydrated, thanks to its water content and electrolytes (potassium and magnesium). You can kick it up a notch by making these cute and fun watermelon pizzas. The possibilities are endless with toppings. You can make them sweet or savoury!

2round slices

Watermelon

1/2cup

Full Fat Greek Yogurt

1Tbsp

Maple Syrup

1

Peach

1/2cup

Strawberries

1/2cup

Blueberries

1/2cup

Raspberries

7leaves

Mint

2Tbsp

Hemp Seed

Instructions

In a bowl, add the yogurt and maple syrup. Mix to combine and set aside.

Heat the grill to about 400°F.

Place the watermelon on the grill and cook for two to three minutes per side or until you see grill marks.

To assemble, spread yogurt onto each grilled watermelon slice followed by the sliced peaches, strawberries, blueberries, raspberries, mint leaves and hemp seeds (if using).

Cut into “pizza” slices and enjoy!

Notes: Serving size: One serving is two slices.

Substitutions: Make it dairy-free: Use coconut yogurt. Switch up the fruit: Use any fruit of choice for the toppings. Other toppings: Chocolate chips, chia seeds, shredded coconut.
