Grilled Lemon Garlic Pork Tenderloin

1 1/2 lbs
Pork Tenderloin
silverskin removed
2 Tbsp
Extra-Virgin Olive Oil
1
Lemon
juiced plus a few wedges to squeeze on top of cooked pork

Garlic Cloves
minced
1/4 tsp
Sea Salt
1/4 tsp
Black Pepper
1/4 tsp
Dried Oregano

In a large Ziploc bag, add the pork and all other ingredients (except extra lemon wedges).

Close the bag (make sure to release any air) and massage the pork, from the outside, to make sure it’s completely covered in the marinade. Marinate for at least 20-30 minutes on the counter.

Preheat your grill to medium-high heat, around 400 degrees F. Once heated, place pork on the grill and close the lid.

Grill for about 20 minutes, flipping half-way through (10 minutes per side) or until the pork reaches your desired doneness. You can also sear the outsides of the pork close to the end.

Let the pork tenderloin rest for 5-10 minutes. Cut into slices about 1-2 inches thick.

Squeeze some lemon on top and serve with grilled vegetables, potatoes or your favourite side salad.

Store in an airtight container in the fridge for up to 3 days.

Note: Silverskin is like a tough connective tissue that is on the outside. It’s often chewy and hard to break down during cooking. It almost looks like a layer of tape. Peel it a little bit and then take a sharp knife under it to help you get it off.
