Baked Zucchini Fries

Zucchini is the perfect vegetable to make fries out of and it’s a great way to add more veggies into your diet!

    Preheat the oven to 425°F and line a large baking sheet with parchment paper.

    In a large bowl, add the zucchini fries and tapioca flour. Toss to coat the fries.

    In a shallow bowl, add the eggs and whisk. In another shallow bowl, add the breadcrumbs, garlic powder, oregano, parsley, sea salt and mix to combine.

    Working with a few zucchini fries at a time, dip them in the egg mixture then into the breadcrumbs. Place them on the baking sheet.

    Bake for 15-20 minutes or until golden brown. You can broil for 5 minutes if you want them to be crispier.

    Serve with your favourite protein and dipping sauce. Enjoy!

    Substitutions: Use other breadcrumbs that you have or use gluten-free breadcrumbs if needed.
