Cauliflower Steaks with Green Sauce

These cauliflower steaks are a delicious side dish with an easy green sauce loaded with herbs.

Extra-Virgin Olive Oil
1 tsp
Coriander
2 tsp
Smoked Paprika
1 tsp
Cumin
1 tsp
Turmeric Powder
1/4 tsp
Cinnamon Powder
1/4 tsp
Sea Salt
1/4 cup
Fresh Parsley
1/4 cup
Cilantro
1 1/2 Tbsp
Capers
1 tsp
Dijon Mustard

Preheat the oven to 400ºF and line a baking sheet with parchment paper.

Slice your cauliflower into 1-inch “steaks,” leaving the large stem at the bottom so it helps the “steaks” hold together.

Place the cauliflower steaks on the baking sheet and rub 3 tablespoons of olive oil on top.

In a small bowl, add the spices from the coriander through to the sea salt.

Rub the spice mixture all over the cauliflower, being careful not to break the cauliflower steaks.

Place in the oven to bake for 25 minutes, flipping halfway through.

Meanwhile, in a food processor or blender add the parsley, cilantro, capers and mustard and process. Slowly drizzle in 1/4 cup of olive oil until combined and the sauce is smooth.

Divide the cauliflower onto plates and drizzle with the green sauce. Serve and enjoy!

Substitutions: No cardamom: omit. Spices: use a shawarma spice mix instead of individual spices. No capers: omit, add extra sea salt. No cilantro: omit, and use extra parsley.
