Air-Fryer Corn & Zucchini Fritters

These easy air fryer zucchini and corn fritters are perfect for using up extra zucchini in the summer. Plus you don’t need very much oil to cook the fritters and get them crispy. These are perfect for gluten-free and dairy-free diets.

Zucchini

Frozen Corn

Serrano Pepper

Red Onion

Garlic Cloves

Large Egg
1Tbsp
Lemon Juice
3/4cup
Oat Flour
1tsp
Smoked Paprika
1tsp
Baking Powder
1tsp
Kosher Salt
1spray
Avocado Oil Spray
Instructions

Using a cheesecloth or a nut milk bag strain the shredded zucchini very well to remove water. Transfer to a large bowl.

Add all remaining ingredients (except the cooking spray) to the bowl and mix well to combine.

Preheat the air fryer to 365℉.

Divide the mixture into about 11 fritters using your hands to form them, adding extra flour if necessary to hold them together.

Place the fritters in the air fryer, leaving some space between. Spray lightly with cooking spray and bake for six minutes, flip and cook for another six to seven minutes, until browned and crispy.

Serve with your favourite dip and enjoy!

Substitutions: No spice: omit the serrano pepper or use a milder pepper. No corn: omit and use extra zucchini.
