Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

Place the sweet potatoes on the baking sheet and coat in 2 tbsp of oil, half the salt and half the pepper and rub the potatoes to coat well. Flip the cut sides down and roast for 20 minutes until softened and browned.

Meanwhile, in a large skillet, add the remaining oil and sauté the onion, carrot, celery and garlic for five to seven minutes. Add the ground meat and break it up as it cooks with a wooden utensil.

Add the maple syrup, tomato paste and smoked paprika and mix them into the meat mixture. Continue cooking until the meat is cooked through, about five to seven minutes.

When the sweet potatoes are cooked, flip them over cut-side up and gently mash the flesh, making a well in each half. Scoop the sloppy joe filling into each sweet potato and garnish with the green onion. Enjoy!

No meat: use tempeh instead of ground meat.
