Gluten-Free Gingerbread Loaf

1/4 cup

Almond Milk

1/4 cup

Extra-Virgin Olive Oil

2/3 cup

Coconut Flour

2

Eggs

1/4 cup

Maple Syrup

1 tsp

Cinnamon

1/2 tsp

Ground Ginger

2 Tbsp

Blackstrap Molasses

(optional)

1 cup

Heavy Coconut Cream

3 Tbsp

Icing Sugar

1 tsp

Vanilla Extract

Instructions

Add the almond milk, olive oil, eggs, maple syrup and molasses to a medium-sized mixing bowl. Use a whisk to combine.

Add in the coconut flour, cinnamon, and ginger and mix again.

Spoon mixture into a parchment-lined loaf pan.

Bake at 350F for 25-35 minutes.

In a bowl whisk together the coconut cream, icing sugar and vanilla extract to make your coconut cream icing (optional).

Let cool for 10 minutes before adding icing on top if using. Enjoy!
