Delicious, seedy cookies made with gluten free oats and tapioca flour. Sweet (but not too sweet), these cookies are a great source of plant protein, a nutritious source of fibre and they are chalked full of zinc and selenium!

1/4 cup

Sunflower Seeds

toasted

1/4 cup

Sesame Seeds

toasted

1/2 cup

Maple Syrup

1

Egg

3 Tbsp

Vanilla

1 cup

Tapioca Flour

1/4 cup

Gluten-Free Rolled Oats

1/2 cup

Unsalted Butter

softened

Instructions

Preheat the oven to 350F.

In a bowl combine the flour, seeds and oats.

In another bowl combine the maple syrup, egg, vanilla and softened butter, and whip to combine.

Add the wet ingredients to the dry ingredients and combine until there are no flour pockets remaining.

On a baking sheet, spoon out the batter using a tablespoon measure, being sure to leave space in between each cookie.

Bake for 17 minutes, and turn the tray halfway, at the 8:30 mark.

Remove from the oven and allow to cool.
