Celiac disease is a digestive disorder in which the body is intolerant to gluten. Gluten is a common protein found in some grains. Celiacs experience various symptoms of varying severity when gluten is consumed, from mild gastrointestinal discomfort to severe malabsorption. Those with celiac disease must abstain from gluten entirely. When a person with celiac consumes gluten, their immune system launches an attack. The immune system essentially mistakes gluten for something more dangerous. What results is damage to the GI tract, particularly the villi that line the small intestine and assist with nutrient absorption. Malabsorption is a severe issue for those with celiac, along with the development of multiple food intolerances and increased intestinal permeability.
