Grain Free Chickpea Pancakes

Who says pancakes have to be a cheat meal? These arrowroot, chickpea pancakes will provide a great source of protein and fibre, making it the perfect breakfast to start your day.
In a blender combine all the remaining ingredients, except the vegetable oil, and allow it to sit, blended, for 5 minutes.
Heat the vegetable oil in a cast iron pan on medium heat.
Using a 1 tbsp scoop, add 3 individual scoops, resisting the urge to crowd the pan. Once bubbles start to form at the top, about 3 minutes, gently flip the pancakes and cook an additional 3 minutes.
Serve hot with maple syrup.
